Ask your grown-up helper to cut two slices. Leave one slice sitting out on a plate, totally open to the air. Then, take the other slice and wrap it up tight like a little sleeping bag in plastic wrap. Now, we watch and wait!
Very quickly, you will see that the slice left out in the air turns brown much quicker. Why does that happen? Because of the air around us! The air has something invisible in it called oxygen. When oxygen touches the cut apple, they have a little chemical reaction, and that reaction turns the apple brown!
The wrapped-up apple doesn't get as much contact with the air, so its reaction gets delayed. It stays looking fresh and white!
Now, what if we change the temperature? Let's say we put a fresh apple slice in the super cold freezer. What do you think happens to it?
It turns brown much, much more slowly! That is because the cold temperature acts like a slow-motion button. It slows down the chemical reaction so the apple stays white for a long time!
But what if we do the opposite and make it super hot? If a grown-up helps you boil an apple slice in hot water for just one single minute, something amazing happens. The heat stops the browning from happening at all!
The hot water actually kills the tiny cells inside the apple that cause the color change. It is like turning off the color-switch permanently!
We can also use everyday kitchen ingredients to build shields for our apples! If you dip your apple slices in honey, salt water, or even apple juice, they won't turn brown quickly.
These liquids create a physical barrier—like a tiny raincoat—between the apple and the air, keeping the oxygen away.
And here is a real mystery for you. If you mix baking soda with water and put it on the apple, it stops the browning completely. And get this... scientists aren't completely sure why it works so well! It is a genuine science mystery waiting to be solved!
